Roasting releases the moisture inside, caramelizes sugars, and develops complex flavors. The key to great coffee lies in finding the roast that complements the bean’s natural qualities.&nbsp; Roast Levels ExplainedUnroasted Green Coffee Green coffee varies in color by origin. South American beans are pale green, Ethiopian beans are brownish, and water-processed decaf beans are darker brown. While these beans smell grassy, they don’t taste like coffee yet!Drying Stage (~320°F ) During the drying stage, moisture evaporates. The beans start to smell sweet and hay-like. While interesting to smell, they’re still far from drinkable.&nbsp; Light Roasts City Roast (~400°F ) A light roast preserves the bean’s natural origin characteristics. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.A very fruit forward and floral cup of coffee! A stellar example if you like the slow dried natural process. Although it is a Colombian coffee this is not for you traditional Colombian fans. Very unique tastes in this offering. If you enjoy coffees like Ethiopian Naturals, Indo Bali Kintamani, Zambia Natural, this will be right down your alley. One will see pretty two-toned roasting with it and very fruit forward winy/floral/fruity tones.Manos Juntas is a micromill in Sotara area of Colombia’s Cauca region, operated and managed by Banexport. The entire concept of this micromill is based on simplifying tasks and responsibilities, for both producers and export companies.This particular offering was first purchased in its cherry form when delivered to the mill by eight local producers, on the day of harvest. Upon arrival, the Brix and pH were recorded, and the cherries were placed in large hermetic tanks for a five-day-long anaerobic fermentation. After this, the cherries were taken to raised beds under a parabolic dryer to begin their 30-day process of slowly drying.Processing coffee is half the battle for small scale farmers, which is why Banexport decided to establish Manos Juntas Micromill, in which they purchase cherries from producers and manage the processing, drying, and storage themselves. This model allows producers to focus on healthy production of specialty coffee, while the meticulous work of sorting, processing, drying, and storing is managed by Banexport’s team.Tasting Notes: A very fruit forward and floral exotic Colombian. After this prolonged two-step process of fermenting, the coffee was washed and then gently dried on raised beds.Specially designed to obtain the best sweet fruit and citrus notes out of the Huila region.An awesome exotic Colombian, tasty from light to dark. Brighter, sweeter and thinner bodied than you average Colombian. Full of floral, soft fruit and chocolate like tones.Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty &amp; chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty &amp; smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.

Well, perfection is in the eyes of the beholder, but this blend is very tasty and will appeal to a wide variety of coffee fans. A bit on the exotic side, works well from light to dark. Fruity with nutty/earthy/chocolaty tones at the lighter roast points, while darker roasts promote more stout like, smoky with heavy bakers chocolate tones.As an upfront warning, the natural tones come through in the cup no matter the roast point, so if you do not like fruity naturals, this is not the blend for you!Contrast blending is the same idea behind a Mokka/Java blend. Take something fruity and lighter toned and blend with something hefty and darker toned. This blend is a joy for the beans are perfectly matched, both produced by the same operation and processed to the same specs.Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste. A bit of bolder spice compliments the more delicate features: great mouthfeel.
